What it's for

Ingredient prices go up while menu prices stay the same, and nobody knows which dishes make money and which ones just break even. Here you enter your ingredient price list once and write recipe cards, and portion cost, food cost and markup are calculated automatically, including waste. Dishes above the target food cost are highlighted in red.

What's inside

  • "Settings": target food cost, "borderline" tolerance, price rounding step, menu categories.
  • "Ingredients": a price list for 150 items — pack price and size, processing waste; the price per gram (millilitre, piece) is calculated automatically.
  • "Dishes": up to 40 recipe cards with 12 ingredients each by net weight, portion cost, food cost, markup, profit, price for the target food cost and a name check.
  • "Menu summary": a ranking of all dishes by food cost, averages by category, and a food cost chart with a target line.

Who it's for

Owners and chefs of cafés, restaurants, canteens and bakeries, delis and food delivery businesses, and anyone opening their own venue and working out menu prices.

Compatibility

Excel 2007 and later, LibreOffice. No macros. Targets and parameters are in the settings, so you can adjust them. The calculation is indicative.

The file is in English.

Questions and answers

How is waste taken into account?
For each ingredient you enter a waste percentage. The price including waste equals the price per gram divided by (1 − waste), and in the recipe card you enter the net weight, i.e. what ends up on the plate.
What is food cost and what target should I choose?
Food cost is the share of ingredient cost in the dish price. You set the target on the "Settings" sheet; the sample uses 30%, but for your format it may be different.
What happens if I misspell an ingredient name?
The name is chosen from the price list. If you type it manually with a mistake, the "Check" column shows "not in price list", so you immediately see which ingredient is not counted.
Can I count eggs and other items by the piece?
Yes. Choose the unit "pcs", enter the pack size in pieces (a pack of 10 = 10), and enter the net weight in the card in pieces.
